Justin, I downloaded the data sets you posted, and verified that the table versions you currently have installed do supply the needed parameters/levels. To clarify your message below, I found 11 added parameters rather than 10. That is, specific humidity and dewpoint are both in the data set for 2 meter height (surface), whereas you did not mention specific humidty at that level in your message.
