In this file there are two SRH fields - surface and layer between 2 heights. The latter is 0-1000m and the level gets set (rightly or wrongly) to 500 (as the average level) when you display it. Subtracting the two (e.g. sub(a,b)) would give you the difference between the layer SRH and the surface SRH. The layer difference expects a 3D grid that then gets sliced at the appropriate levels.
