Giovanni,

Yes, gptraj does kinematic 2-D trajectories using any U and V components on any 
level/coordinate you can provide. You can interpolate grids to isentropic 
coordinates or 
sigma coordinates using the GDVINT program if you don't have grids on those 
coordinates already.
