Is there a documented example or two somewhere on how to look at WCS
served data via IDV?

No work has been done on using the IDV to look at the WCS
data directly. The original money for the WCS development at Unidata
was only for servers, not clients. If you save the file that
is served up via WCS to your local disk, you should be able to open
it in the IDV using the File Chooser.

Any of the data served as WCS that is also served as netCDF
or OPeNDAP should be accessible in the IDV if it is pointed
to by a THREDDS catalog.
