Hello, thanks for the follow-up! In our own workshop content using Channel 2 (https://github.com/Unidata/metpy-workshop/blob/main/notebooks/solutions/workshop_solutions.ipynb) we use the reversed Greys colormap "Greys_r" from Matplotlib (https://matplotlib.org/stable/tutorials/colors/colormaps.html#sequential) matplotlib.pyplot.imshow(channel02_data, cmap='Greys_r') and we let matplotlib handle the normalization and extent of the colormap for us. I'm not familiar with the specific colormaps other providers might use for visible imagery. I hope this helps!
