The format is somewhat described in the docs here: https://unidata.github.io/MetPy/latest/api/generated/metpy.plots.ctables.read_colortable.html You can also find some example files here: https://github.com/Unidata/MetPy/tree/main/src/metpy/plots/colortable_files You're talking, more or less, about a single color per line. It's really simple, but more importantly, it doesn't expose everything you might want in terms of replicating some colormapping in Matplotlib.
