Hi Stu, Yes, ncview will make variable vs. time plots. You just invoke it with the name of the file, it popos up a window with all the variable names on buttons, and clicking any variable button pops up a plot of that variable. If it's 1D, then you get a simle time plot. It's very intuitive and quick.
