There are a number of things you can do to handle large data sets that are 
taking up too much memory.
You can change how much memory Java will allocate:
 http://www.unidata.ucar.edu/software/IDV/docs/userguide/Faq.html#memory

You can also subset the grid in time and space and sub-sample it:
http://www.unidata.ucar.edu/software/IDV/docs/userguide/misc/PerformanceTuning.html
