Use the View->Viewpoint->Vertical Scale menu (or click the icon that looks like a comb on the Viewpoint Toolbar) to bring up the vertical scale dialog. The default for the globe is -16km to 16km. 0 is the surface of the globe. For datasets with high altitudes (i.e. low pressures), you could increase it to be -25 to 25 km. You might have to play around to get the desired effect.
