Thanks Steve. 

The problem is that you had a parameter define (altitude) in the 
"Color From Parameter" tab which takes precedence over the "Map Value into 
Color Table"

The Color From Parameter treats the parameter as an enumeration and allows you 
to
define a specific color for each enumeration value (which really can be a 
string pattern).
