The "None Defined" would indicate that you have not yet displayed the data in it's native projection. This menu is populated by the projections of data that have been displayed (hence the title "from displays"). Is the Projections->Auto-set Projection menu checked when you try to display the data? Another thing to check would be the Data Source properties. Use the Data-><data source name>->Edit->Properties menu to look at the Spatial Subset tab and see if the map shows the area that you think it should be covering. Lastly, if the data doesn't display, could you provide a sample file?
