Chris,

If you are referring to grids, use the GDVINT program to convert to/from 
isentropic
coordinates such as shown in the 3 example exercises at the bottom of:
http://www.unidata.ucar.edu/software/gempak/tutorial/coordinates.html

If you are referring to sounding data, you would need to set VCOORD=THTA and
specify the LEVELS range in Kelvin.
