I did notice one thing that seemed a little odd: /instance/org.python.pydev/INTERPRETERS_CHECKED_ONCE=true but I'm not exactly sure how/where that is set (I'm not seeing it on my install). How are you starting CAVE? From the Desktop shortcut or the Start menu? Can you ensure you don't have any other versions of CAVE installed? Maybe try re-installing this latest version. And can you take a screencapture of your Desktop shortcut properties window and you env variables?
