Hello,

Yes, if you are plotting 500m heights, these are in AGL (above ground level) 
which requires ground (not over the oceans). You can plot heights at 850mb, 
700mb, 500mb, 200mb, etc and those will plot heights (in decameters - aka 
geopotential heights) which do plot over the ocean.
