Hi Sam, I'm glad to hear you've been able to set up your own EDEX and ingest radar data so far. Hopefully I can help a little with the other data. Another AWIPS team member is out of the office today, and she might have more insight on file types as well and I might have more information from her sometime tomorrow. For model data, the file type has to be grib or grib2. I'm not totally confident about whether each product needs to be a separate file, but I believe if it's in grib/grib2 format it should process properly. Even if there are no menu items available, you should be able to find your data in either the Product Browser (http://unidata.github.io/awips2/cave/d2d-perspective/#product-browser) or Volume Browser (http://unidata.github.io/awips2/cave/d2d-gridded-models/). These webpages have a little information about how to use those tools. If the model data you're using is not recognized by the current configurations in your EDEX, you may need to define a navigation file, model definition file, and a table. See http://unidata.github.io/awips2/edex/new-grid/ for more detailed information. You should be able to look at the EDEX ingest logs (/awips2/edex/logs/edex-ingestGrid-YYYYMMDD.log) to see if your grid data is decoding properly. You can also edit the menus (http://unidata.github.io/awips2/cave/d2d-edit-menus/) to include your data directly as menu options. You should be able to download GOES single channel data, METAR Data (either from ISU or NCEI), and some model data from (https://www.ncdc.noaa.gov/nomads/data-products). I'm not sure about where to download model sounding data in the proper format, but can ask around and hopefully find an answer for you.
