The UDUNITS-2 parser should accept all UDUNITS-1-compatible strings, so you could use the UDUNITS-2 documentation if you ignored support for UTF-8 (e.g., exponents, ohm and micro symbols) and for logarithmic units. Otherwise, the UDUNITS-1 documentation (such as it is) is at <http://www.unidata.ucar.edu/software/udunits/udunits-1/index.html>.
